This is so quick to make and full of flavor. The greens are done in minutes and if in a real hurry you can buy tofu already baked at any grocery store, Just heat it up in a skillet a couple of minutes on each side. You will look like a gourmet chef.

Ingredients

  • 1 Tablespoon vegan butter
  • 1 large or 2 medium leeks white part only and some of the green if tender. Washed and chopped
  • 2 Shallots chopped
  • 2 cloves of garlic minced
  • 2 cups water
  • ½ cup medium ground cornmeal
  • ½ teaspoon dried Thyme
  • ½ teaspoon dried Rosemary
  • 1 teaspoon salt.
  • White pepper to taste
  • The zest of half a small organic lemon
  • 1 cup frozen peas
  • 1 cup cubed vegan cheese I used Miyoko’s smoked mozzarella. Other options are Follow your Heart Gouda

Directions

  1. Put the butter in a pan that has been heated on med high let melt.
  2. Then put in leeks and shallots, cook until translucent 3-5 minutes
  3. Add the garlic cook for a minute
  4. Add water and bring to a simmer
  5. Add cornmeal, constantly whisking to keep the lumps down, turn down to medium. Let cook while whisking until it starts to thicken.
  6. Add in frozen peas and vegan cheese, cook until the cheese is melted and it’s nice and creamy.
  7. Serve with sauteed greens and baked tofu.
