This is so quick to make and full of flavor. The greens are done in minutes and if in a real hurry you can buy tofu already baked at any grocery store, Just heat it up in a skillet a couple of minutes on each side. You will look like a gourmet chef.
Ingredients
- 1 Tablespoon vegan butter
- 1 large or 2 medium leeks white part only and some of the green if tender. Washed and chopped
- 2 Shallots chopped
- 2 cloves of garlic minced
- 2 cups water
- ½ cup medium ground cornmeal
- ½ teaspoon dried Thyme
- ½ teaspoon dried Rosemary
- 1 teaspoon salt.
- White pepper to taste
- The zest of half a small organic lemon
- 1 cup frozen peas
- 1 cup cubed vegan cheese I used Miyoko’s smoked mozzarella. Other options are Follow your Heart Gouda
Directions
- Put the butter in a pan that has been heated on med high let melt.
- Then put in leeks and shallots, cook until translucent 3-5 minutes
- Add the garlic cook for a minute
- Add water and bring to a simmer
- Add cornmeal, constantly whisking to keep the lumps down, turn down to medium. Let cook while whisking until it starts to thicken.
- Add in frozen peas and vegan cheese, cook until the cheese is melted and it’s nice and creamy.
- Serve with sauteed greens and baked tofu.
