(This is Vegan, Dairy free, Oil-Free and can be made Gluten-Free)
Ingredients
- 2 Med sweet potatoes peeled, then steamed or boiled. Let them cool a little.
- ½ cup Nutritional yeast
- or Fortified Nutritional yeast
- ¼ cup + 1 Tablespoon lemon juice
- 1 Tablespoon of chickpea miso
- 1 Teaspoon real salt
- 1/8 teaspoon liquid smoke
- 1 teaspoon onion powder
- 1 teaspoon smokey paprika
- ¼ cup water
- 10-12oz package of elbow noodles
- Optional 1 cup steamed broccoli cut in bite size pieces
Directions
- Place in a blender and blend till smooth
- Taste to adjust seasonings
- Cook a 12oz package of your pasta of choice according to the package instructions, I always go a minute or two less, so my pasta is al dente. especially if I’m going to put it in the oven.
- Pour the cheeze sauce over the pasta and combine. I like to add steamed broccoli florets, so more veggies are getting into everyone’s diet. If desired, you can also put a bread crumb topping. ½ cup breadcrumbs of choice mixed with a tablespoon of vegan butter. Then crumble on top.
- Put in a 350-degree oven for 25-30 minutes
