This is great for the holidays with the tart and sweet mix of flavors.
Ingredients
- 1 ½ cups cashews that have been soaked for 2 hours drained and rinsed. The fast method is to boil for 10 minutes, then rinse and drain
- ¾ cup water start with ½
- 3 tablespoons nutritional yeast
- 2 tablespoons lemon juice
- 2 tablespoons apple cider vinegar
- ½ teaspoon garlic powder
- ½ teaspoon salt
- 2 tablespoons Agar flakes
- ½ cup fresh or thawed frozen cranberries cut in half
- ½ cup chopped dry figs
Directions
- Put everything in the blender except cranberries and figs.
- Blend till completely smooth
- Pour into a pan on med heat. Keep whisking until it thickens.
- Take off heat, add cranberries and figs
- Take a piece of parchment paper and line the dish you will be using for the mold.
- Put into the refrigerator for 2 hours or more. Then take out of mold and put on a plate to serve.
